Stuffed Breakfast Potatoes Are The Newest Breakfast Craze To Try

Twice baked potatoes are amazing. They're crispy on the outside, stuffed with fluffy delicious goodness, and topped with melty cheese—does it get much better than that?! Well now stuffed potatoes can join you for breakfast. It's like having your eggs, bacon, and potatoes all in one convenient little package and then covered in cheese. Cheese makes everything better. What you'll need:

- two potatoes
- 2 eggs, beaten
- 2 strips bacon, chopped
- salt and pepper to taste
- 2 tbsp shredded cheese
- 2 tbsp parmesan

The method:

Pierce your potatoes and bake them at 400°F for 40-50 minutes. Once they are baked, let them cool a bit so that you don't burn your fingers. OUCH! Then cut off the top and, using a spoon, hollow out the potato, putting the insides into a bowl. Add your eggs, bacon, salt and pepper to the bowl and mix it. Spoon this mixture into your potatoes. Top with your cheese. Bake for 25 minutes at 400°F oven. DONE! You get to enjoy deliciously stuffed potatoes for breakfast! Mmmmm.
