Chicken fingers are the bomb. It can be so tempting to buy a box of the frozen strips, but those things are packed full of sodium and other preservatives. Making your own SEEMS daunting, but it's actually really easy. Seriously, once you see just how easy it is, you won't ever want to buy the frozen kind again. Now... what is going to take chicken fingers to the next level? Spicy buffalo sauce, of course. But don't buy the bottled stuff because making it yourself is SO easy and you probably have ingredients in your kitchen right now! Get your snacking pants on, because this spicy dish is Diply-approved for deliciousness.

What you'll need:

- 2 chicken breasts
- 2 cups sriracha sauce
- 3 tbsp mayo
- 5 eggs
- panko bread crumbs
- flour
- scallions
- 1 tbsp sesame oil

The method:

Cut your chicken breast into strips. Beat your eggs in a bowl until well mixed. Mix your mayo and hot sauce in a separate bowl. Chop your scallions. Take your strips of chicken and dip them in the eggs, making sure that they are well covered. Cover them in flour and then cover them in the bread crumbs. This sounds tedious, but it actually goes by quite quickly. Place them on a pan covered with parchment paper (because it makes cleaning up SO easy). Place into a 375 degree oven and bake for 25 mins. Toss your chicken in the sauce (or drizzle it on) and top with green onions. Realize how easy that was and make a declaration to anyone who will listen that you'll never buy frozen strips again.
