- 1/4 cup chopped walnuts
- 2 tsp coconut sugar
- 2 tsp melted coconut oil
- 3/4 cups Greek yoghurt
- 2 tsp honey
- 2 cups raspberries, chopped
- muffin tin and 6 liners
The method:
In a small bowl combine your walnuts, coconut sugar, and melted coconut oil. In a separate small bowl mix your greek yoghurt and honey. Now take your muffin tin and fill it with the liners. Divide your walnut mixture evenly into the bottom of the liners. Next spoon your Greek yoghurt mixture on top of the walnut one. This will be about 2 tbsp in each liner. Top with the chopped raspberries.(If you need to sneak a couple pieces of raspberries to "taste test" while you do this, I won't judge). Freeze for 6 hours. Done. Now you have a delicious froyo treat that you can feel good about indulging in.
