Tasty Microwave Mug Coffee Cake

Mug cakes are perfect for the following reasons: you get to eat cake within minutes, they take minimal effort, and they're single serving. When I need a pick me up, a quick dessert like this is perfect. And you probably have the ingredients in your pantry right now. Seriously, you could have cake in your hands two minutes from when you're reading this. And it's a coffee lover's perfect dessert. It smells like a heavenly cup of joe when it comes out of the microwave. If I could convince myself that it was okay, I would totally be having this in the morning. Trust us here at Diply, we love our coffee and love our desserts!

What you'll need:

- 1 egg
- 2 tbsp milk
- 1 tbsp vegetable oil
- 3/4 instant coffee
- 1 tsp hot water
- 4 tbsp flour
- 1/4 tsp baking powder
- 2 tbsp sugar
- pinch salt

The method: 

Crack and egg into a mug. Add milk and oil and mix. In a separate bowl or cup, mix your instant coffee with your water (or, if you're sipping on strong coffee as you make this, you can simply use that instead) and pour that into your mug. Add flour, baking powder, sugar, and salt. Combine. Smile smugly to yourself because you're done and that took like a minute to do. Pop it into the microwave for a minute(ish). DONE! Seriously. That's it! Careful when it first comes out of the microwave because it'll be hot. My suggestion is to place a big scoop of chocolate or coffee ice cream on top while it's still warm and eat it out of the mug like that.
